That sounds really good! I've made cakes with applesauce for the main liquid ingredient. And, as I read, I was thinking that you could try replacing the wine with Concord grape juice, or apple cider, or even pineapple juice and use orange marmalade for the filling! (And maybe ginger and lemon peel for flavoring instead of the pumpkin pie spice, in a lemon cake instead of a spice cake....)

Dylan Thomas did a recipe that was spice cake mix with a can of pumpkin which turned out well.

That would work! I sometimes put grated carrots in and make it a carrot cake.

Once upon a time, one of the local companies made some pumpkin spice eggnog that included real pumpkin. Having tried it, you do not need to repeat the experiment.
