Random side thought, speaking of beets: my paternal grandparents used to make a relish where they ground horseradish with pickled beets. The two nicely complimented each other: it made the beets less meh, while taming the kick of the horseradish -- though it'd still clear your sinuses something fierce. I don't remember the exact ratio, but it was definitely weighted to the beet side. Like a lot of those recipes, it was "adjust to taste and heat tolerance."
